Quiche Quickie Lorraine
This is one of the best quiche recipes I've ever made and there have been many.
Prep: 25 minutes Cook: 30 minutes Serves: 6 Ingredients:
- 1 (9 inch) unbaked pie crust
- 1/2 cup ham / turkey / chicken, diced
- 1/2 pound Gruyere cheese, shredded (Swiss does the trick ;)
- 1 Tbsp. butter
- 1 onion, chopped
- 4 - 5 eggs, depends on size
- 1 spring onion, finely sliced
- a pinch of salt
- a pinch of ground nutmeg
- 2 cups warmed milk
- Note: If you want a richer and creamier filling then 1 cup of whipping cream and 1 cup of half and half
- Preheat oven to 375 degrees F (190 degrees C).
- Line bottom of unbaked pie shell with diced ham and grated cheese.
- In a large saucepan, melt butter over medium-low heat.
- Add onions and cook slowly, stirring occasionally until onions are soft.
- Spread over ham and cheese in pie shell.
- Sprinkle sliced spring onion over top.
- Beat eggs and add salt and nutmeg to taste.
- Gradually stir in warmed milk and heat this mixture over a low heat until it begins to thicken.
- Pour slowly into the pie shell.
- Bake in a preheated 375 degree F oven for 30 minutes or until custard is set and golden on top.
- Allow to cool slightly before slicing.
