Quiche Quickie Lorraine

Quiche Quickie Lorraine

This is one of the best quiche recipes I've ever made and there have been many.


Ingredients:
  • 1 (9 inch) unbaked pie crust
  • 1/2 cup ham / turkey / chicken, diced
  • 1/2 pound Gruyere cheese, shredded (Swiss does the trick ;)
  • 1 Tbsp. butter
  • 1 onion, chopped
  • 4 - 5 eggs, depends on size
  • 1 spring onion, finely sliced
  • a pinch of salt
  • a pinch of ground nutmeg
  • 2 cups warmed milk
  • Note: If you want a richer and creamier filling then 1 cup of whipping cream and 1 cup of half and half
Directions:
  1. Preheat oven to 375 degrees F (190 degrees C).
  2. Line bottom of unbaked pie shell with diced ham and grated cheese.
  3. In a large saucepan, melt butter over medium-low heat.
  4. Add onions and cook slowly, stirring occasionally until onions are soft.
  5. Spread over ham and cheese in pie shell.
  6. Sprinkle sliced spring onion over top.
  7. Beat eggs and add salt and nutmeg to taste.
  8. Gradually stir in warmed milk and heat this mixture over a low heat until it begins to thicken.
  9. Pour slowly into the pie shell.
  10. Bake in a preheated 375 degree F oven for 30 minutes or until custard is set and golden on top.
  11. Allow to cool slightly before slicing.
