Fried Herring in Oatmeal

Fried Herring in Oatmeal

Serves 4

Ingredients:
8 fresh herrings
8 oz. (225g) oatmeal
2 Tbsp. flour or seasoned bread crumbs
4 oz. (115g) butter
1 teaspoon salt
freshly ground black pepper

Directions:
Split and bone herrings and wash well.
Mix salt, oatmeal, flour/seasoned bread crumbs together.
Roll herrings in dry mixture making certain both sides are coated.
Heat butter in a frying pan until hot.
Add herring skin side up.
Fry both sides for 3-5 minutes
Remove from pan and drain on paper towel.
Serve immediately with mashed potatoes and peas.
