Harvest Pancakes

Harvest Pancakes
Serves 4
Ingredients:
1/2 pound bulk pork / turkey sausage
1 egg
2/3 cup milk
2 tablespoons vegetable oil
1 cup pancake mix
1/2 teaspoon ground cinnamon
1/2 cup peeled apples shredded
Syrup:
1/2 cup granulated sugar
1 tablespoon cornstarch
a pinch OR 1/8 teaspoon pumpkin pie spice
1 cup apple cider
1 tablespoon lemon or apple juice
1/4 cup maple syrup
2 tablespoons butter or margarine
Method:
In a skillet, cook the sausage over medium heat until no longer pink, then drain and set aside.
In a bowl, beat egg, milk and oil.
Stir in pancake mix and cinnamon just until moistened.
Fold in shredded apple and sausage.
Pour batter by 1/4 cupfuls onto a lightly greased hot griddle.
Flip pancakes when bubbles form on top.
Cook until second side is lightly golden in colour.
For Syrup:
Combine granulated sugar, cornstarch and pumpkin pie spice in a saucepan.
Gradually stir in apple cider, lemon/apple juice and maple syrup until smooth and bring to a boil.
Stir while cooking for 2 minutes or until thickened.
Remove from heat and stir in butter until melted.
Serve warm with the pancakes.
