Plum Yummy Loaf

Plum Yummy Loaf


This is a lovely loaf recipe that I often make for Thanksgiving and Christmas.

Ingredients:
  • 1 egg
  • 1/4 cup honey
  • 1/2 cup milk
  • 1/2 cup applesauce
  • 2/3 cup white sugar
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1 cup peeled and chopped plums
  • 1/2 cup chopped walnuts(optional)

Directions:
  1. Preheat oven to 350 degrees F (175 degrees C).
  2. Lightly grease a 9 x 5 inch loaf pan.
  3. In a large bowl, mix egg, honey, sugar, milk, applesauce and vanilla.
  4. Blend in the flour, baking soda, cinnamon and nutmeg.
  5. Fold in the plums and walnuts.
  6. Pour the batter into the prepared loaf pan, and bake for 50 to 60 minutes in a preheated oven.
  7. A toothpick inserted into the center of the loaf should come out clean and that means it's done.
