Appleishes Cinnamon Muffins

- 1/2 cup butter, softened at room temperature
- 3/4 cup granulated sugar
- 1 egg, beaten
- 1 cup buttermilk, yogurt or sour cream
- 1 tsp. salt
- 1-1/2 cups apples, diced
- 2 cups flour
- 1 tsp. baking soda
- 4 tsp. baking powder
- 1 tsp. cinnamon
- *You can use nutmeg as well but I find it overpowering.
- Topping:
- Mix together;
- 1-1/2 tsp. cinnamon
- 2 to 3 Tbsp. brown sugar
Directions:
- Preheat oven to 375 degrees.
- Beat together butter and sugar until creamy
- Beat in the egg until smooth.
- Add buttermilk or yogurt or sour cream, salt and apples and mix well.
- Mix together flour, baking soda, baking powder and cinnamon and add to apple mix to moisten.
- Spoon into greased muffin cups and sprinkle with topping.
- Bake for 20-25 minutes or until.
