Crrrazy Cranberry Nut Loaf
Ingredients:
2 cups all-purpose flour
1 cup granulated sugar
1-1/2 tsps baking powder
1 tsp. salt
1/2 tsp. baking soda
1/4 cup butter
1 egg
3/4 cup orange juice
1 Tbsp. grated orange zest
1-1/2 cups fresh or frozen cranberries
1/2 cup chopped walnuts
Method:
Preheat oven to 350º.
Lightly grease an 8×4 loaf pan.
Mix together flour, sugar, baking powder, salt and baking soda in a medium bowl.
Cut in butter until the mixture resembles coarse crumbs.
In another bowl, beat egg, orange juice and orange zest.
Gently fold into the dry mixture.
Fold in cranberries and nuts.
Pour mixture into a greased loaf pan.
Bake for 65 to 70 minutes or until a toothpick/skewer inserted in the middle comes out clean.
Cool in loaf pan for 10 minutes then remove to a wire rack and cool completely before serving.
Approximately 10 slices.
