Apple Buttermilk Loaf

Apple Buttermilk Loaf

Mmmmmm delicious and good for you too.

Ingredient
  • 1 cup whole wheat flour
  • 1-1/2 cups all-purpose flour
  • 1/2 cup natural bran cereal
  • 1 tsp. baking soda
  • 1/2 tsp. baking powder
  • 1/4 tsp. ground ginger
  • 1/2 tsp. cinnamon
  • 1-1/3 cups buttermilk
  • 3/4 cup granulated sugar
  • 1/4 cup vegetable oil
  • 1 large egg
  • 1 tsp. grated orange zest
  • 2(small) Golden Delicious or Royal Gala apples, peeled, cored and chopped
Directions
  1. Heat oven to 350 degrees F.
  2. Grease a 9 by 5 inch loaf baking dish.
  3. In a medium bowl, combine whole wheat and all-purpose flour, bran cereal, baking soda, baking powder, and ginger.
  4. In a large bowl, beat buttermilk, sugar, vegetable oil, egg, and orange zest.
  5. Add flour blend to buttermilk mixture, stirring until just combined.
  6. Fold in apples.
  7. Spread batter in a prepared pan and bake for 45 to 50 minutes or until wooden pick inserted in center comes out clean.
  8. Cool loaf in pan 10 minutes.
  9. Cool completely before serving.
