Appleishes Cinnamon Muffins

Appleishes Cinnamon Muffins Recipe
With apple season approaching, I always look forward to preparing recipes that include my favorite fruit.


Ingredients:
  • 1/2 cup butter, softened at room temperature
  • 3/4 cup granulated sugar
  • 1 egg, beaten
  • 1 cup buttermilk, yogurt or sour cream
  • 1 tsp. salt
  • 1-1/2 cups apples, diced
  • 2 cups flour
  • 1 tsp. baking soda
  • 4 tsp. baking powder
  • 1 tsp. cinnamon
  • *You can use nutmeg as well but I find it overpowering.
  • Topping:
  • Mix together;
  • 1-1/2 tsp. cinnamon
  • 2 to 3 Tbsp. brown sugar

Directions:
  1. Preheat oven to 375 degrees.
  2. Beat together butter and sugar until creamy
  3. Beat in the egg until smooth.
  4. Add buttermilk or yogurt or sour cream, salt and apples and mix well.
  5. Mix together flour, baking soda, baking powder and cinnamon and add to apple mix to moisten.
  6. Spoon into greased muffin cups and sprinkle with topping.
  7. Bake for 20-25 minutes or until.
