Basic Yellow Cake

Basic Yellow Cake


The following recipe from Carroll Pellegrinelli, makes a moist yellow cake from scratch.

Ingredients:
  • 2 cups cake flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup butter, softened
  • 1 cup sugar
  • 3 large eggs at room temperature
  • 2 teaspoons vanilla extract
  • 3/4 cup milk
Directions:
  1. Preheat oven to 350°F.
  2. Grease and flour 2, 9 inch cake pans.
  3. In a bowl, combine flour, baking powder, and salt with a wire whisk.
  4. Cream butter and sugar with a mixer until light and fluffy.
  5. Beat in eggs, one at a time.
  6. Add vanilla and mix until completely combined.
  7. Slowly add flour alternately with milk.
  8. At end of addition batter should be smooth.
  9. Divide between 2 pans.
  10. Bake for 20 to 25 minutes.
  11. Cool 5 minutes in pan, then invert onto a rack and cool completely before frosting.
  12. For a 9 x 13 pan - Baked at 350 degrees F. for 30 to 38 minutes.
